Portuguese chouriço or chouriça, is a delicious smoked sausage made with pork, fat, wine, paprika, garlic, hot pepper and salt. Chorizo gets its distinctive smokiness and deep red colour from smoked, dried red peppers - pimentón/pimentão. The difference between Portuguese and Spanish Chorizo is that Portuguese Chouriço has considerably less paprika and more garlic and black pepper. In addition to a lot of Portuguese red wine to round out the flavour. Delicious in a variety of dishes, it's perfect both on its own, grilled or simmered - the possibilities are endless.
