Bleu D'auvergne is a French semi-soft blue cheese and often considered to be the grandfather of the Blue cheese family. It has a creamy and smooth texture and buttery and tangy flavour profile that is unique to the blue cheese family. Originating from the Auvergne region of south-central France, it is sometimes referred to as the cow’s milk version of Roquefort, yet is buttery and creamier. With age, the distinct peppery and pungent taste of the Bleu D'auvergne grows as does the similar aroma. This cheese is excellent as a standalone cheese and plays the supporting role equally as well.
